If you have ever craved eating a dessert for breakfast, then this recipe is for you – A soft cake with the addition of old fashioned oats, this can be enjoyed as a snack, dessert or breakfast!

It is a an amazing breakfast oat cake –Light, fluffy and tender cake with chewy bits of rolled oats. It is so good that my kids we have been enjoying this cake almost everyday. Almost like microwave breakfast muffin. Since it is an eggless recipe, it is perfect if you are a vegetarian or if you simply run out of eggs.

Ingredients

Oats – We used rolled oats (also known as old fashioned oats)

Flour – Regular unbleached all purpose flour

Sugar – We used golden brown sugar

Milk – Use whole or reduced fat milk

Oil – Use a neutral oil like vegetable or canola oil

Flavorings – Ground cinnamon

Leavening – Baking powder

How to make?

Whisk dry ingredients – Add oats, flour, brown sugar, cinnamon, baking powder and salt into a microwave safe mug. Mix until thoroughly combined.

Mix in wet ingredients – Mix in milk and oil to make a smooth batter.

Cook – Microwave for about 1 minute and 45 seconds.

Expert tips

Oats – Use only rolled or old fashioned oats for this recipe and not quick cooking/instant oats.

Brown sugar – Use golden or light brown sugar and not dark brown.

Cooking time – It depends on the size of mug used

Wider mug – 1 minute + 40 seconds

Narrow mug – 1 minute + 50 seconds

Stir batter until lump free – Using a spoon, stir the cake batter until smooth and no lumps remain.

Best eaten hot– Enjoy this cake HOT! As with mug cakes, some might dry out a little when left at room temperature.

Type of mug to use – Any microwave safe coffee mug. The batter will rise significantly when cooking. So, make sure that mug is big enough.

How to serve?

Instructions

1. Add first 6 ingredients (oats, flour, brown sugar, baking powder, cinnamon and salt) into a microwave safe mug and stir well.

2. Mix in milk and oil, until smooth and well combined.

3. Microwave for 1 minute plus 40 seconds (if using a wide mug) or 1 minute plus 50 seconds (if using a narrow mug).

DO NOT OPEN MICROWAVE IN BETWEEN

4. Remove mug from microwave, top with desired toppings and enjoy!
